Monosodium glutamate is an umami flavor enhancer. A spice added to dishes to enhance flavor. It's used on a massive scale in every Asian household, street food joint, bar, and restaurant.
Umami is the fifth taste perceived by humans (a taste defined as brothy or meaty). Umami is carried by glutamic acid, an amino acid found in meat, vegetables, algae, and mushrooms, among other things.
Over a century ago, glutamate was isolated into powdered (crystalline) form and became a spice. Asians perceive this product as something natural, something added to food, like salt and pepper.
